Hidden Veg Fritters
Made: way too many to count and the last one was gigantic as I was sick of flipping!
- 1 1/2 cups SR Flour
- 3 eggs
- 1 cup milk
- kernals from 2 cobs corn
- 3/4 cup peas
- 1 large carrot
- 1 medium onion
- 1/2 cup grated cheese
- 3-4 slices of bacon - optional
- salt & pepper to taste
- In a food processor, bellini or thermomix, blitz up the veggies & bacon so they are nice and fine.
- Add remaining ingredients and mix until well combined.
- Heat a frypan with a little oil and just like pancakes pour batter onto hot frypan and flip when they start to show bubbles. Continue to fry off the fritters until all batter is used up.
