Baked White Chocolate and Blueberry Chia Cheesecake Slice

My saturday invention... Baked White Chocolate and Blueberry Chia Cheesecake Slice. OMG its so good! I even made the base healthy so only half dish is naughty! #lovemybellini #tastethelove #homemade #healthyish #yummy #cheesecake



- 100g #cashews
- 50g shredded #coconut
- 200g #dates
Blitz together until well combined and sticky. Press into a slice tin lined with baking paper and set aside.

- 250g cream cheese
- 1/2 cup sugar
- 1/2 cup sour cream
- 2 eggs
- splash vanilla
- 75g #whitechocolate
- couple spoons of #jam (I used my #blueberry and #chia seed jam)
Melt chocolate and set aside. Beat together first 5 ingredients then add melted chocolate and mix until its combined. Pour over base and with a knife swirl thru the jam (might need to heat jam a bit to make easier to swirl). Bake for 35-40mins @ 180° then allow to cool for couple hours in fridge until firm enough to slice.

Sensory Play - Rice

I've been a bit slack on the whole blog thing since I found the wonderful world of Instagram...  however I will try and post the items here too as I know its easier to 'pin' things from a website (such a shame you can't pin from facebook etc)... maybe one day!

Working with our OT on Ella's food issues we going back to basics and starting with sensory play. Made these awesome brightly coloured rice for our first senosry day. Ella is going love it when she gets home from kindy!

To make the coloured rice just mix 1 cup of plain white rice with 1/2 tsp vinegar and a few drops of food colouring. Either use a ziplock bag or a container with a lid and shake, shake, shake! Ta-da!!! Lay out on a tray to dry overnight.

Pumpkin Cupcakes

During my 'use up' day, where I use up whatever I have left in the fridge before tomorrows new fruit & vegetable parcel arrives, I came across a whole pumpkin that looked lonely and was begging to be used up.  So I got to thinking what things can I make with the pumpkin...  So dinner tonight is going to be pumpkin & feta risotto, I left some pumpkin in the fridge for tomorrows dinner of basic meat & vegs and then I thought about something sort of sweet...  enter the pumpkin cupcake!

I love my pumpkin pie recipe that I've used for years so I just changed it up a bit so it was more of a cake than a pie and gave it a go.  They taste really yummy!  Half have been gobbled up already and the rest are now in the freezer for easy snacks for the week.

Pumpkin Cupcakes

  • 500g pumpkin, raw (should make approx 420g cooked pumpkin)
  • 90g brown sugar
  • 2 eggs
  • 1/2 cup cream
  • 1/4 cup sour cream
  • 1 Tbsp vanilla 
  • 1 1/3 cup SR flour
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1 tsp ground nutmeg
  • Pinch of salt
  1. Preheat oven to 180 degrees.
  2. Peel and chop up pumpkin, wrap in foil and bake in oven for approx 30mins until tender, allow to cool slightly.
  3. Line a muffin tray with cupcake liners.
  4. Beat together sugar, eggs, cream, sour cream and vanilla
  5. Add cooled pumpkin and remaining ingredients and mix until well combined.
  6. Pour mixture between cupcake liners and bake for approx 20mins or until completely cooked in centre.
Note:  I used sour cream because that's what I had to use up, otherwise I would have used 3/4 cup of cream in total.  No wastage here!!!!

DIY Zoo Toy Storage

Ella loves stuffed toys and like most little girls, she has a massive pile of them that never seem to look neat no matter how much you tidy up.  I did some googling the other day and saw this thing called The Zoo and it was amazing, but way too expensive for my tight budget.  So I got to thinking and did some rearranging in her playroom and today while she was at kindy we got in and made this, in under 10mins!

So happy with how it ended up and so much easier to see all her stuffed toys instead of them just being ontop of each other in a toybox in the corner.

All we did was screw some wide elastic onto the front of our ikea expedit cube (making sure you pull the elastic nice and tight and double over the ends) to create the 'zoo bars' then the soft toys can be squashed in any which way!

Simple and easy and looks so cute!
